~Lemon Shortbread in Fenton~

Middle son asked for lemon bars 
for a friend at school. 

Kid said his mom couldn't make 'em.

Turns out, friend's mom 
was making chocolate cake for
my boy and they were swapping. 

I don't like being bossed around like that. 
(wonder if my boy said HIS mom 
couldn't make chocolate cake???)
Just because my son doesn't SEE 
the cake, surely doesn't mean
I haven't made one. 

I made lemon shortbread instead,
just to show I'm not gonna be
pushed around. 

My boy says he received 
three hunks of chocolate
cake at lunch. 
Do you think I 
saw even a bite of any? 

Lemon shortbread
from Donna Hay magazine

2/3 cup (150g) unsalted butter, softened
1/3 cup + 1 tablespoon (55g) icing sugar, sifted
¼ cup (60ml) lemon juice
finely grated zest of 2 lemons
1 teaspoon vanilla extract
1 ¾ cups + 1 tablespoon (255g) all purpose flour, sifted
2 tablespoons corn starch, sifted
2/3 cup (94g) icing sugar, extra, sifted

Place the butter and icing sugar in the bowl of an electric mixer and beat for 8 minutes or until pale and creamy. Add the lemon juice, zest and vanilla and beat until combined. Add the flour and corn starch and beat just until a smooth dough forms. Turn dough onto a lightly floured surface and divide in half. Place each half onto a large piece of baking paper form into a 20cm (8in) long log. Wrap well in the paper and refrigerate for 1 ½ hours or until firm.
Preheat the oven to 180°C/350°F. Line two large baking sheets with baking paper.
Unwrap one of the dough logs (keep the other in the fridge) and slice it into 1cm-thick rounds. Place onto the prepared baking sheets 5cm (2in) apart and bake for 15-18 minutes or until light golden. Remove from the oven and cool in the sheets for 5 minutes.
Gently toss the warm shortbreads in the extra icing sugar and allow to cool completely on wire racks.

In celebration of the fact
that shortbread does not
have eggs in it...
I placed flowers in an egg cup. 
Have I told you I get my eggs free?
I don't mean the ones my chickens
lay either.
I have a neighbor who has a neighbor
who works at the "egg plant". 
She gets them from chickens of
course...and gets free dozens
each Friday to give away. 
I was eggless yesterday
and was happy not to need one
as I usually do when making cookies.

This is an easy and very yummy
little treat! 
I have a good mind to make another batch
today and tomorrow and Saturday.

LOVE,LOVE,LOVE shortbread AND ADD lemon and WOW IT'S SPECTACULAR!!! If your son got 3 big hunks of choco cake for your shortbread "THAT says ITS a HIT"!!! You said MIDDLE SON...I have 3 sons(is that what you have TOO)? My middle son is the SPICE of the group. WHAT A CHARACTER! Mine are ALL grown up though. My Baby boy is 30(OUCH!!!)

Oh me oh my! Hubby LOVES any and all sweets with citrus in them, especially lemon bars and lemon meringue pies... I MUST try this recipe! Thank you for sharing it!

Do those ever look deeee-lish! we love shortbread...and lemon ~ we can't imagine we've never paired the two together :) Loved the story about your son....something mine would do as well~ lol! (they're all about trading food in grade/middle school I've found!)

Both looks delicious - the shortbread (i LOVE all things lemon) and the flowers in the eggcups, so sweet!
